Traditional Duck & Quebec Pork Rillettes
Inspired by our farmhouse know-how, our traditional rillettes made with duck (raised on our farm) and pork from Quebec are prepared in small batches, patiently and respectfully, right here on the farm.
We carefully select beautiful cuts of duck raised by us, slowly confited and then hand-shredded. A touch of Quebec pork is added to create a melting texture and a perfectly balanced flavour. Everything is bound with our homemade duck stock and simply seasoned with salt and pepper, without artifices, allowing the true taste of the ingredients to shine.
A generous, authentic and comforting product, created for the pleasure of simple things done well, and now a staple on our gourmet tables.
This recipe is the little sister of our 100% duck rillettes, sharing the same care, the same farmhouse craftsmanship and the same high standards of quality. It is part of our two complementary product lines, designed to offer different expressions of duck while respecting the authenticity of the product.

Serving & Storage
Refrigerate for approximately 2 hours before serving.
Serve cold or slightly tempered.
Remove both lids and gently push from the narrower side toward the wider opening.
Once opened, keep refrigerated and consume within 3 to 6 days.
Suggested Pairings
Perfect for brunches, charcuterie boards, or cheese platters.
Spread generously on a fresh baguette or rustic country bread.
Also delicious with onion confit, fresh figs, walnuts, or a touch of mild mustard.
Wine & Spirits Pairings
Pairs beautifully with:

Duck meat confit, Quebec pork, fine duck fat, water, duck bones (for the preparation of our homemade duck stock), carrots, onions, garlic, leeks, celery, Guérande sea salt, spices, fine herbs.
